wonderful recipe – cellophane noodles with pork

At my last WW meeting Lyds suggested I post the recipe of a dish which I credit with my 4.6lb one week loss.

This recipe will produce what WW calls 4 portions, but since the points value is quite low I double up on the portions for eating at a single meal. Each portion is 4 points, but even at 8 points if you eat 2 portions that is a very reasonable amount of points for a single meal.

  • 200g ground lean pork (I’ve tried it with chicken and it works just as well)
  • 6 spring onions
  • 4oz chopped mushrooms
  • 1tbsp low sodium soya sauce – I use kikkoman (sp?) as I find the flavour quite pleasant
  • 1tbsp crushed ginger
  • 4 chopped cloves of garlic
  • 1/3c low sodium chicken stock
  • half a pack of cellophane noodles or asian rice noodles – about 2oz (they are extremely light so it is a fair bit)
  • 1tsp oil

Boil some water and then pour over the noodles – the noodles, much like couscous will “cook” while you are preparing everything else.

Fry the pork, the spring onions (finely chopped) along with the garlic & ginger. Add the soya sauce when the pork is nearly cooked through. Add in the chicken stock and then the noodles. Mix together and let it cook gently until all the liquid is absorbed by the noodles.

Where this recipe varies from the WW recipe is that I don’t add in hoisin sauce, I find that the flavour is just as excellent without it. The original WW recipe doesn’t include mushrooms, but I love ’shrooms and I just needed to include them. Bulks up the recipe and they have virtually no points. As I mentioned, officially this serves 4 portions. But when I get home at night and I’m quite hungry I can eat 2 portions at once. Comes out to 8  points and it’s fabulous. Takes hardly any time to prepare, at the most 20 minutes, and is a great way to create a lovely meal really quickly.

This past Weekend

I weighed myself yesterday, Sunday, and there was no change; no weight loss. At first I was a little disheartened but then I told myself this is okay, I haven’t gained anything and I am due to get my period in about 4 days… so there could be water retention.

I intend on powering through this and hopefully next Sunday I can see some results.

I have also decided to increasing my walking as I wasn’t too thrilled with how little I did last week, averaging 6000 paces per day. I want that up to atleast 10,000 per day.

I also need to re-focus myself with regards to food. Last night I made a low-carb/non-lactose chicken curry. I bought 1kg of skinless chicken breasts yesterday and threw them into a pot with one onion, 3 cloves of garlic, one 16oz tin of chopped tomatoes and a lot of curry powder.

Today I have had, so far:

Breakfast – 3 rashers of bacon, 2 large eggs fried with mushrooms, onion, tomato and green pepper

Lunch – 2c salad (with tomato, cucumber and a small splash of italian dressing), 1c curry with 2c steamed cauliflower

Dinner – my mom is taking me out, but I get to choose where, so I’m thinking Le Marche as I could get some roasted chicken and salad or steamed veggies there.

I didn’t blog about this weekend, silly me.

I have found it harder to stick to this diet on weekends. That has always been the hurdle for me in whatever diet I have tried. I can be super good during the week, but once I’m home that structure from the week is gone.

Yesterday I had some carbs, I was bad, but it was 2 slices of high fibre german bread made without sugar. So I’m justifying it to myself in that it had 4g of fibre per slice and were low carb.

Breakfast – 2 rashers of bacon, 1/4c chopped tomato, 2tbsp chopped onion, 2 mushrooms chopped, 2 large eggs

Lunch -2 slices high fibre german bread, 2oz swiss cheese, 2oz genoa salami

Dinner – I just nibbled on some celery, I wasn’t really hungry

Saturday – I made a beef stew as per the recipe in Neris & India’s Idiot Proof Diet but didn’t eat any of it. I went to dinner at Lydia’s and Andrew’s and had a lovely roast beef with a tiny amount of roasted potatoes, green beans and mushrooms. Breakfast/lunch was with my mom and I had bacon & eggs at a brunch place.

Today, Monday – breakfast (I ran out of bacon) – 2oz chopped kelbasa, 1/4c chopped tomato, 2tbsp chopped onion & 2 eggs all cooked together in one frying pan.

Lunch – it’s the beef stew I made (using Lydia’s herbs). I threw in some extra broccoli this morning. Hopefully it will be good and scrumptious.

Dinner – I think it  will be chicken, I have some defrosting in my fridge as I type.

 

Overall I feel okay, very tired, but I think that’s down to a possible bladder infection. I feel slightly smaller, though it isn’t noticeable to most yet…. 5 pounds with regards to my current shape isn’t that noticeable, but hopefully once I hit the 10-15 pound mark peeps will see something; I’m certainly hoping to feel something :-)
